Smoked Gouda is made in a specific way. First Gouda cheese is melted and then smoked on willow wood in a smokehouse. The smoke gives a unique flavor to this - sausage shaped - cheese.  Sold in a one pound piece.  Its a really nice size for slicing when served with crackers and wine of course.
